One of the top comfort foods in the US and typically named "Toasties" by New Zealander's - a good grilled cheese sandwich is hard to beat.
Next time your cranking up your sandwich press, try one of these great recipes. You can easily make them just as tasty Gluten and Dairy free.
Cranberry Grilled Cheese Toastie
Serves 1
Ingredients
2 slices of Bread
2 Tbsp Sujon Cranberries (defrosted in the microwave for 20 second, then chopped)
1 Tbsp Pecans (roasted and crushed)
2 slices of Cheese or 1 Tbsp of Vegan dairy free spread
1 Tbsp of Butter or Vegan buttery spread
Method
Spread the butter on one slice of bread
Top with a sprinkle of pecans, cheese and cranberries.
Spread the outside of each slice of bread with the butter/vegan spread.
Place the sandwich in a hot grill press or frying pan and grill until the cheese is melted
with a gooey centre and the bread is golden brown.
Blueberry Grilled Cheese Toastie
Serves 4
Ingredients
8 slices Bread of your choice - GF works great too
1 Tbsp Butter
2 tsp Honey
150g Brie cheese
50g Sujon Blueberries (defrosted in microwave for 20 seconds, then chopped)
Method
Butter one side of each slice of bread.
Spread honey on 4 of the buttered slices.
Divide the Brie among the 4 honeyed slices and top with 1/4 of the blueberries on each slice.
Then place the bread slices on top with the buttered side out.
You can brown the sandwiches in a pan on medium heat or place in your sandwich press until the cheese is melted and the bread is golden.
Serve warm and enjoy!
