Delicious Recipe: How to Create Gooseberry and Onion Marmalade

If you’re craving a light meal or snack with the perfect balance of sweet and savory flavours, you’ve come to the right place. This marmalade recipe pairs well with baguettes topped with creamy Feta cheese and fresh rocket leaves.


Featuring the tang of gooseberries and the rich sweetness of caramelised onions, this dish is topped off with a drizzle of olive oil and balsamic dressing.


Sujon Gooseberry and Onion Marmalade topped on Baguettes with Feta and Rocket leaves

This recipe serves four people and to make it you will need:


For the Gooseberry and Onion Marmalade

  • 500g sliced Red Onions

  • 100ml White Wine Vinegar

  • 150g Sugar

  • 150ml Red Wine

  • 2C Sujon Gooseberries

  • 1Tbsp Honey


For the Serving

  • 4 slices of Baguette

  • 4 slices of Feta cheese

  • 100g picked Rocket leaves

  • Olive oil and Balsamic dressing


Combine the Red onions, Vinegar, Sugar and Red Wine and simmer over a low heat until it starts to caramelise (approx. 20 minutes), add Sujon frozen gooseberries and simmer for a further 3 minutes. Leave the marmalade to cool.

 

While the marmalade is cooling, slice and brush baguette slices with olive oil, place slices of of Feta cheese on each and place under the grill and semi melt.


Serve on side plates with a tablespoon of marmalade and rocket salad on top dressed with olive oil and balsamic.
