How to make your own Blackcurrant juice

As the days are warming up, this is a great refreshing drink to make.

It is a simple recipe and only uses 4 ingredients!

Ingredients:

300g caster sugar

300ml water

Zest and juice of 2 lemons

450g Sujon frozen Blackcurrants

Method:

In a large saucepan place the sugar and water.

Bring to a simmer, then add the lemon zest, lemon juice and blackcurrants.

Cook the mixture over a medium heat until the blackcurrants start to soften and burst.

Pour the mixture through a muslin cloth into a heatproof jug.

Transfer the cordial into sterilised bottles (you will need enough bottles to hold 600ml).

When your ready to serve use approx. 25ml per 100ml of water. It is also nice with sparkling water and a great base for cocktails!

The juice cordial keeps up to 1 month in the fridge. Feel free to also swap out the Blackcurrants with other berries of your choice.
