Muffins made easy

Nothing tastes better than a warm homemade blueberry muffin straight from the oven😋

Here's the recipe to make these fluffy, sweet and soft muffins❤️⠀

⠀

Blueberry Muffins⠀

• 1 and 3/4 cups flour⠀

• 1 teaspoon baking soda⠀

• 1 teaspoon baking powder⠀

• 1/2 teaspoon salt⠀

• 1/2 cup unsalted butter⠀

• 1/2 cup sugar⠀

• 1/4 cup brown sugar⠀

• 2 eggs⠀

• 1/2 cup sour cream or plain yogurt⠀

• 2 teaspoons vanilla extract⠀

• 1/4 cup milk⠀

• 1 and 1/2 cups frozen Sujon blueberries⠀

⠀

For The Topping you will need:⠀

• 1/2 cup packed brown sugar⠀

• 1/2 cup chopped walnuts⠀

• 1 teaspoon ground cinnamon⠀

⠀

Preheat oven to 220°C and grease a muffin tin.⠀

Mix all of the topping ingredients together. Set aside.⠀

Whisk the flour, baking soda, baking powder, and salt together in a large bowl.⠀

Beat the butter, sugar, and brown sugar together until smooth and creamy, approx 2 minutes. Add the eggs one at a time, beating well after each addition. Beat in the sour cream and vanilla extract until combined. Add the dry ingredients and milk into the wet ingredients and slowly beat until just mixed. Fold in the blueberries.⠀

Spoon the mixture into the muffin tins and sprinkle the topping one each one.⠀

Bake for 5 minutes at 220°C then reduce the oven temperature to (180°C). Bake for an additional 18 minutes. Let cool and dust with icing sugar if you like!⠀

Recipe lovingly adapted from sallys baking addiction. ⠀
