These two delish recipes were created by the super talented Kiwi triathlete and food lover Anneke Jenkins
First up is the classic Banana bread with a Blueberry twist. I loved how moist this recipe and it was a huge hit with my kids.
Banana and Blueberry Bread
2-3 ripe bananas
6 free range eggs
4-6 fresh pitted dates depending on how sweet you like it (Medjool if possible)
2 tsp vanilla
¼ cup coconut oil
½ tsp cinnamon
2 tsp baking powder
½ cup coconut flour
¼ cup chia seeds
¼ cup Sujon frozen Blueberries
METHOD:
Heat oven to 170 degrees Celsius, fan forced.
Line a loaf tin with baking paper.
Blend bananas, eggs, dates, vanilla, coconut oil, cinnamon and baking powder until smooth.
Fold in coconut flour.
Fold in chia seeds and let sit for 10 minutes.
Lastly very gently fold in blueberries – if you mix it will turn your mixture blue/green.
Bake 50-55 minutes until skewer comes out clean.
Healthy oat and berry cookies
These berry cookies Anneke has created are a great lunch box filler. They also store well in the freezer which is perfect for those occasions when you feel like a healthy treat.
1 ½ cups rolled oats
1 ¼ cups spelt or buckwheat flour
2/3 cup coconut sugar
1/3 cup desiccated coconut
115g melted coconut oil and/or butter
1 egg
½ tsp baking soda
pinch of salt
½ cup Sujon frozen blueberries
METHOD:
Pre-heat the oven to 170 degrees Celsius and line a tray with baking tray.
Mix all together in one large bowl, until well incorporated.
Using your hands, roll into golf ball size balls, push 3-4 blueberries into the cookies.
Bake for 18-20 minutes.
Will keep in an airtight container or a jar for up to a week.
